Mango Salsa Ingredients

Lots of cooking today, starting with mango salsa. I’ve photographed the finished product before, so today I decided to try my hand at composing a still life from the ingredients: mango, red pepper, red onion, cilantro, lime juice, salt & pepper.

To go with the mango salsa, I’m making some Jerk Chicken. Jamaican Jerk Marinade has a lot of ingredients, and since I had my lights all set up for food photos anyway I went ahead and snapped some shots of those ingredients too:

I like jerk chicken a lot, but it has a lot of ingredients (soy sauce, vegetable oil, onion, green onion, garlic, brown sugar, lime juice, Serrano chilis, and spices) and it requires advanced planning (so the chicken can soak in the marinade for several hours) so I don’t make it too often. This morning I started a nice big batch. Enough that Peter and I can have it for dinner tonight AND I can make jerk chicken quesadillas when I go for Buffy Night with my girlfriends tomorrow.
