Turkey-Pesto Meatballs
Little tubs of ready-made pesto were on sale at the grocery store, so I bought one.
Some ideas for what to do with pesto:
– roasted root vegetables (Brush chunks of potato, turnip, carrot, etc. with olive oil and roast in a 400 degree oven until tender on the inside and golden brown on the outside. Toss roasted veggies with a big dollop of pesto and a little bit of butter).
– pesto butter (Let butter come to room temperature, stir in some pesto, then chill the butter in the fridge until it firms up again. Really good on slices of toasted french/italian bread)
– sandwich condiment (e.g., smoked turkey, swiss cheese, sliced red peppers, and pesto)
– Pesto meatballs (Mix together ground turkey, fresh bread crumbs, egg, pesto. Simmer for 25-ish minutes in the spaghetti sauce of your choice.)
And that’s how to use up an entire tub of pesto :)
Update: Leftover pesto-roasted-root-vegetables make a delicious soup. (Add vegetable or chicken broth, onions, celery, and garlic, simmer for a while, then puree in the blender. Garnish with chives and/or bacon)
